I was in the mood for pasta, but wanted something healthier and with a bit of a crunch. I whipped out my spiralizer and had pesto zoodles in no time!

Serves 2-3
Ingredients:
3 whole zucchini
1/2 broccoli head
1 tomato
1 white onion
2 tbsp pine nuts
2 cups of kale
1 cup of spinach
1 cup of basil
2 tbsp sesame seeds
Nutritional yeast
Garlic powder
1 lemon
Salt
Recipe:
1. Place whole zucchini’s in spiralizer to create zoodles.
2. Blend basil, spinach, 1 cup of kale, pine nuts, nutritional yeast, garlic, lemon juice and salt. Add water for desired consistency.
3. Sauté garlic and onion in a pan, then add tomato, broccoli, 1 cup of kale and sesame seeds.
4. Once cooked through, add zoodles and pesto to heat through but not cook fully. Zoodles should still have a slight crunch to them.
5. To serve, top with basil and a sprinkle of nooch.
