Part 2 of my vegan Japanese Valentine's Day feast! I made a variety of different kinds of sushi incl. onigiri, and california rolls. We ended up doing a DIY sushi making party, so I don't have the exact recipes for each sushi roll, but I'll do my best to give you an idea of what we made! Massive success, my boyfriend was very happy (and full)!

Serves 2-4
Ingredients:
Sushi rice
Sushi ginger
Rice vinegar
Nori
Tofu
Carrot
Capsicum
Avocado
Cucumber
Cabbage
Radish
Vegan chicken
Mango
Sesame seeds
Soy sauce
Vegan aioli
Wasabi
Vegan sriracha mayo
Recipe:
1. If using tofu or vegan meats, cook as desired. I thinly sliced my tofu, and panfried in soy sauce. For the vegan chicken, I cooked as usual in an air fryer.
2. Thinly slice all filling ingredients.
3. On a sushi mat, lay a piece of glad wrap so ingredients don't stick. Then place a sheet of nori and cover with a thin layer of sushi rice (cooked according to instructions on pack). At one end of the sushi square, create a line of your chosen filling ingredients. Roll away from yourself, squeezing while rolling. Make sure everything is confined, then slice with a damp sharp knife.
4. For california rolls, repeat same process but with the sushi rice layed out on the mat before the nori.
5. For onigiri, hold a ball of sushi rice in your hand and form a triangle. Create a small dent in the triangle and add chosen ingredients. Cover the dent with more rice, until contents are hidden and you have a perfect triangle. Either cover entire sushi with nori, or just place a strip around the bottom.
6. Similar process as above for musubi. Create a small rectangle, and place a slice of tofu on top. Cover with a strip of nori around the entire sushi.
7. Top rolls with sesame seeds, sauces, wasabi, ginger, or however you feel inspired.
