Mediterranean Nachos

I had never heard of this before, but I won't take invention credit because I'm sure there's a clever cookie out there that thought of this before me. Either way, it's delicious and I 10/10 recommend that you try this!

P.S. Can you tell this was a midnight feast? Does the photo taken in the pitch black give it away?



Prep time: 10 min

Cooking time: 30 min

Serves 3-4


Ingredients:


Pita bread

1 1/2 can of chickpeas

1 tsp tahini

2 lemons

1 cup of unflavoured coconut yogurt

1 yellow capsicum

2 tomatoes

1 red onion

1 cucumber

Kalamata olives

1 veggie stock cube

1 tsp tahini

Moroccan seasoning

Fresh parsley

Garlic

Salt

1 tsp dill

1 tsp oregano


Recipe:


1. Pita chips - Cut whole pitas into 8 pieces and season with salt, pepper, veg stock and Moroccan seasoning as much as desired. Put pita wedges in air fryer (or oven) for 20 mins, tossing occasionally. 2. Hummus - Add 1 can of chickpeas, tahini, juice of 1 lemon, garlic and salt to a blender. Blend until smooth, add water if necessary. 3. Tzatziki - Blend together coconut yogurt, juice of 1 lemon, dill, parsley, oregano and salt. Blend until desired consistency. 4. Roast leftover chickpeas in oven with desired seasonings for 25 min, tossing occasionally. Dice raw veggies. Combine all ingredients and top with hummus, parsley, and tzatziki drizzle.
