My mom was in the mood for a tofu scramble, so I whipped one up with some rosemary potatoes and avo and we were living our best lives.

Serves 2-3
Ingredients:
1 block tofu
1/2 yellow onion
1/2 cup peas
1 zucchini
3 potatoes
1 avocado
Spinach
Garlic powder
1 veggie stock cube
Chilli flakes
Rosemary
Turmeric
Nutritional yeast
Tahine
Salt
Pepper
Recipe:
1. Put stock cube and desired seasonings into pan and add 1 tbsp water, once slightly bubbling, crumble tofu into pan and cover with stock mixture. Add diced onion, peas, zucchini, and spinach. Cook for around 15 min, then transfer to air fryer (or oven) until crispy. 2. Boil water in a pot and add diced potatoes. Cook through, then fry in a pan with rosemary and nutritional yeast.
3. Plate with tofu scramble and half an avocado. Top with salt and pepper.
