Quinoa Salad with Puffed Tofu

My favourite salad was taken off the menu, so I obviously had to recreate it at home. Tbh it might have been a blessing in disguise, because it may be better than the original..



Prep time: 10 min

Cooking time: 15 min

Serves 2-3


Ingredients:

1/2 cup quinoa Rocket & lettuce medley 3 tomatoes 1/2 avocado Sliced almonds Alfalfa sprouts 1 lime Puffed tofu Sweet Thai Chilli sauce Salt Recipe:

1. Fan bake puffed tofu in the oven for 15-20 minutes until puffy, and mildly firm.

2. Boil 1 cup of water and add quinoa until fully cooked and there is no water left.

3. Dice tomatoes, almonds, and avocado into small pieces. Combine ingredients, add alfalfa sprouts, lettuce medley, salt, juice of 1 lime, and drizzle sweet thai chilli.

4. Mix well and serve, topped with more alfalfa and almonds.
