Leek and Potato Pot Pie

Comfort food round 2! Can't go wrong with a vegan pot pie.



Prep time: 10 min

Cooking time: 25 min

Serves 5


Ingredients:

Vegan puff pastry 1 white onion 1 leek 5 baby potatoes 2 veggie stock cubes Garlic powder Nutritional yeast Dill Chives Mixed herbs Cumin Salt Fresh coriander Recipe:

1. In a pot, boil potatoes as usual.

2. In a separate pot, put a splash of oil and diced onion. Finely chop leek and spinach and add to pot. Season with desired amounts of herbs and spices, mixed with a decent amount of nooch until everything is cooked through.

3. Once the potatoes are finished, roughly chop and add to leek mixture.

4. Serve into pie pots, or a baking tray and lay puff pastry on top. Create small slits, and fan bake for approx 15 minutes or until crispy on top.

5. Let cool, and serve.
