Simple as that! A healthy and easy meal, with a spicy and fun taste!

Serves 2-3
Ingredients:
2 eggplants
1/2 cup quinoa
2 veggie stock cubes
1 onion
Handful of spinach
1 tomato
1 tbsp fresh garlic
Chilli (optional)
Recipe:
1. Slice eggplant and place on baking tray. Season with veggie stock and salt. Cook in oven for approx 30 min, flipping occasionally.
2. Cook quinoa according to instructions on packet, add 1 stock cube to the boiling water to give your quinoa flavour.
3. In a pan, sauté garlic, onion and pine nuts until crispy. Add chosen veggies - spinach, tomato, sliced chilli’s. Add quinoa once finished, and stir through thoroughly.
4. Assemble by placing quinoa veg mixture on eggplant slice.
