Curried Tofu Wrap

A lazy, delicious quarantine meal! Can't give you exact measurements for this one, just trust your heart!

Ingredients:


1 block firm tofu

Large tortillas

Tomato

Spinach

Red onion

Cucumber

Alfalfa sprouts

Hummus

1 cube veggie stock

Curry powder

Garlic powder

Cumin

Nutritional yeast

Salt

Pepper


Recipe:


1. Dice tofu into cubes, and add to pan. Sprinkle curry powder, garlic powder, cumin, nooch, and crumble in veggie stock. Add a splash of water to coat tofu with seasonings. Cook tofu through, and until water has dissolved into a paste.

2. Lightly warm tortillas in a pan

3. To assemble, coat tortilla with a thin layer of hummus and stack on chosen veggies. Add curried tofu pieces, and season with salt and pepper.

4. Roll into a wrap and drizzle with hot sauce (optional)
