Treating myself to a hearty and delicious ramen after a weekend of filming for the 48 Hour Film Festival - Lockdown Edition!
Serves 4-5
Ingredients:
Noodles
1 block of tofu cubed
1 grated carrot
10 sliced mushrooms
2 tablespoons massaman paste
1/2 can coconut milk
3 teaspoons curry powder
2 cloves garlic
1 teaspoon ginger
5 cups veggie stock
Juice of 1/2 lime
Tamari
Chili flakes
Fresh coriander
Salt
Pepper
Recipe:
1. Marinate tofu with tamari then cook in the oven for 15-20 min.
2. In a large pot, add your aromatics, seasonings, lime juice, massaman paste, and veggies. Sauté for 10 min. Add in stock and coconut milk and bring to a simmer.
3. Add tofu and noodles and cook for another 10 min.
4. Garnish with fresh coriander, lime wedges and chili flakes.
