Day 1 of social lockdown in NZ. Obviously, the only way to react is by panic cooking. Buffalo cauliflower mac and cheese, yes please!! Spicy, cheesy goodness, taking my mind off of the craziness of the world just for a second.

Serves 4-5
Ingredients:
Macaroni pasta
1/2 cauliflower
1/2 cup cashews
Garlic powder
Turmeric
Chilli powder
Mixed herbs
Frank's red hot sauce (or alt. hot sauce)
1 cup water
1-2 tbsp nutritional yeast (depending how cheesy you want it)
Breadcrumbs
Oil
Salt
Recipe:
1. Boil pasta according to instructions on packet.
2. Soak cashews in hot water until relatively soft. Drain out water, and add nutritional yeast, water, 2 tbsp hot sauce, and salt. Blend until smooth.
3. Cut the cauliflower into small pieces. Lay out on a baking tray and coat with oil, garlic powder, turmeric, chilli powder, and mixed herbs to taste. Toss until all pieces are coated, and bake for approx 15 min. Flip occasionally. Once finished, toss pieces in hot sauce (amount to taste).
4. Stir 'cheese' sauce into pasta until mixed through. Pour pasta into a baking tray, and cover with breadcrumbs. Bake until bread becomes crispy.
5. Add cauliflower pieces on the pasta and bake again for 2-3 minutes.
6. Serve and drizzle extra hot sauce if desired.
